Resveratrol is a polyphenol of the stilbene group,and is found in various
plants,especially vines.It is found in greatest quantities in the skin and
seeds of grapes and is also therefore found in wine and grape juice.The
concentration of resveratrol in grapes depends on the variety,harvest and,in
the case of wine,the processing method used.There is more resveratrol in red
wine than in white wine. Resveratrol acts as an antioxidant,both slowing the oxidation process of
fats and capturing free radicals,which are compounds implicated in
cardiovascular diseases.
